Prior to his current role, Professor Adjepong was vice-chancellor of the University of Cape Coast, Ghana. He has served on many boards and committees in Ghana, Nigeria, Kenya, the UK and the USA, and is a former chair of the Council of the Association of Commonwealth Universities and the Committee of Vice-Chancellors and Principals.
